Berries with Pistachio Yoghurt Compote


  • 1½ cups frozen mixed berries, thawed
  • 2 cups low fat natural yoghurt
  • 1 tablespoon orange juice
  • 1 teaspoon finely grated orange rind
  • ⅓ cup chopped pistachios
  • 1 tablespoon maple syrup

Place the berries and their juices in the base of small glass jars. Combine yoghurt with orange juice and rind. Spoon on top of berries. Top yoghurt with pistachios then drizzle with maple syrup to serve.


Serves 4 – 10g nuts per serve
