For the nuts make a spice blend in a grinder of:
Lightly dry fry the nuts in a pan. Add spice mix. When they start to glisten add a little olive oil and fry. This process is really important to stop the nuts from going soggy in the dressing.
Cool, and drain on a paper towel. Add a little more allspice, paprika and salt, and spread over the serving plate. Add all the other ingredients and pile up on the plate- the grapes, apple, sultanas and rocket.
