Ingredients
- 1 1/2 cups almond meal
- 1 cup caster sugar
- 2 tbsp chia seeds
- 2 oranges
- 1/2 cup extra virgin olive oil
- 3 eggs
Method
- Preheat oven to 170 degrees C.
- Use baking paper to line a large loaf tin.
- In a mixing bowl, combine the almond meal, sugar, and chia seeds together.
- Chop the oranges into pieces leaving the skin on. Add them into a food processor and process on high until smooth. Add the oil and the eggs and process until combined.
- Pour the wet batter into the dry ingredients and stir gently to combine.
- Pour batter into the prepared loaf tin and place in the oven to cook for 50-60 minutes or until browned on top and cooked through. If the middle is still a little wet but the sides are cooked, turn the oven off and allow the loaf to sit in the oven for another 10 minutes.
- Remove from oven and allow to cool.
- Slice into 10 even slices.
Tips
Any leftovers will keep for a few days in an airtight container in the fridge.
