Serves 10 people

Ingredients

  • 1 1/2 cups almond meal
  • 1 cup caster sugar
  • 2 tbsp chia seeds
  • 2 oranges
  • 1/2 cup extra virgin olive oil
  • 3 eggs

Method

  1. Preheat oven to 170 degrees C.
  2. Use baking paper to line a large loaf tin.
  3. In a mixing bowl, combine the almond meal, sugar, and chia seeds together.
  4. Chop the oranges into pieces leaving the skin on. Add them into a food processor and process on high until smooth. Add the oil and the eggs and process until combined.
  5. Pour the wet batter into the dry ingredients and stir gently to combine.
  6. Pour batter into the prepared loaf tin and place in the oven to cook for 50-60 minutes or until browned on top and cooked through. If the middle is still a little wet but the sides are cooked, turn the oven off and allow the loaf to sit in the oven for another 10 minutes.
  7. Remove from oven and allow to cool.
  8. Slice into 10 even slices.

Tips

Any leftovers will keep for a few days in an airtight container in the fridge.
