Ingredients
- 3 cups Australian walnuts
- 2/3 cup (150g) caster sugar
- 1/2 tsp fennel seeds
- 1/2 tsp sea salt
Method
- Preheat oven to 180C and grease a baking tray.
- Combine the sugar and one tablespoon of water in a small saucepan on medium-high heat.
- Cook, swirling the pan every now and then so the sugar cooks evenly, for a few minutes or until the mixture turns a golden caramel.
- Remove from heat, add the walnuts, fennel seeds and salt and gently mix to combine.
- Transfer the walnut mixture to your baking tray and try to spread out as much as possible.
- Pop in the oven for 5 minutes, remove and gently stir around then return to oven for another 5 minutes.
- Remove from heat and let cool (stirring the nuts around every 10 minutes or so, so they don’t stick to the pan).
Tips
This recipe makes three cups of delicious walnuts. If you can resist eating them all at once, store the walnuts in a jar or airtight container to keep them fresh!
