Nuts for Life - Mango, feta and Brazil nut salad

Ingredients

For the salad

  • 100g rocket
  • 1 medium sized mango (~180g), diced
  • 30g feta
  • 60g roasted Brazil nuts
  • 1 tsp sesame seeds
  • ½ red onion (50g), thinly sliced
  • Sprinkle of cracked pepper
  • 125g punnet cherry tomatoes, halved

For the dressing

  • 2 tbsp balsamic vinegar
  • 1 tbsp avocado oil
  • 1 tsp honey
  • Salt to taste

Method

  1. In a small bowl, whisk together dressing ingredients.
  2. In a large mixing bowl, mix all the salad and dressing ingredients together.

Tips

Pecans and walnuts can be used instead of Brazil nuts.
