Ingredients
For the salad
- 100g rocket
- 1 medium sized mango (~180g), diced
- 30g feta
- 60g roasted Brazil nuts
- 1 tsp sesame seeds
- ½ red onion (50g), thinly sliced
- Sprinkle of cracked pepper
- 125g punnet cherry tomatoes, halved
For the dressing
- 2 tbsp balsamic vinegar
- 1 tbsp avocado oil
- 1 tsp honey
- Salt to taste
Method
- In a small bowl, whisk together dressing ingredients.
- In a large mixing bowl, mix all the salad and dressing ingredients together.
Tips
Pecans and walnuts can be used instead of Brazil nuts.
