Ingredients
                                            
                                            - 10 Medjool dates, pitted 
 
                                            - 2 tsp vanilla extract
 
                                            - Pinch of salt 
 
                                            - 1 cup almond meal
 
                                            - 1/3 cup peanut butter
 
                                            - 1/4 cup maple syrup
 
                                            - 1/2 cup dark chocolate chips, melted
 
                                            - 1 cup granulated peanuts
 
                                    
                     
                
        
            Method
            
                                    - Line a tray with baking paper. 
 
                                    - Soak dates in boiling water. 
 
                                    - Drain water and add to blender with 1 tsp vanilla and a tiny pinch of salt. Then blitz until combined. 
 
                                    - Scoop out into a mixing bowl, add ¼ cup almond meal and mix to combine. 
 
                                    - In a separate mixing bowl, whisk peanut butter, maple and remaining vanilla. Then add remaining almond meal and stir to combine.  
 
                                    - Add date mixture to peanut butter mixture, and stir together until just combined. 
 
                                    - Roll mixture into balls with your hands (if the mixture is too sticky when rolling the balls, add a few more tablespoons of almond meal, or if it’s too dry, add a tablespoon or so of water). 
 
                                    - Dip balls into melted chocolate with a fork, and then roll in granulated peanuts to cover. 
 
                                    - Place onto your lined tray, and repeat with remaining balls. 
 
                                    - Place into the freezer for 30 minutes to set.
