Nuts for Life - Nutty oat bars recipe

Ingredients

  • ¾ cup rolled oats
  • ¼ cup roughly chopped hazelnuts
  • ¼ cup roughly chopped walnuts
  • ¼ cup roughly chopped cashews
  • ¼ cup whole pistachios
  • ¼ cup raisins
  • ¼ cup dried cranberries
  • 2 eggs, lightly beaten
  • 1 tbsp melted canola margarine, salt reduced
  • 1 tsp cinnamon
  • ⅓ cup plain wholemeal flour
  • 1½ tbsp brown sugar

Method

  1. Preheat oven to 160°C. Line a 20cm square baking tin with non-stick baking paper.
  2. Place all the ingredients together in a large bowl. Toss well until fully combined and mixture is clumpy. Press into prepared baking tin.
  3. Bake for 20 minutes then cover with foil and cook for another 20 minutes until firm and golden.
  4. Cool and cut into bars.
