  • 1 medium store-bought pizza base
  • 1 cup pumpkin ribbons
  • ½ tsp minced garlic
  • 2½ tbsp extra virgin olive oil, divided

Method

  1. Preheat the oven to 250°C.
  2. Place the pizza base onto a baking tray or pizza stone. Drizzle with 1 tablespoon of olive oil and spread evenly over the base. Scatter over the minced garlic and top with the mozzarella.
  3. Bake for 4 minutes, until the cheese begins to melt.
  4. Remove from the oven and top with dollops of ricotta, pumpkin ribbons and chopped mixed nuts. Drizzle with 1 tablespoon of olive oil.
  5. Reduce the oven temperature to 220°C and bake for a further 4 minutes, or until the pumpkin is tender and the crust is crisp.
  6. Meanwhile, combine the honey and chilli flakes in a small bowl.
  7. Remove the pizza from the oven and drizzle with the hot honey and remaining ½ tablespoon of olive oil. Slice and serve immediately.
