Ingredients
Pizza
- 1 medium store-bought pizza base
- 1 cup pumpkin ribbons
- ½ tsp minced garlic
- 2½ tbsp extra virgin olive oil, divided
- 50g mozzarella, sliced
- 100g ricotta
- 120g mixed nuts, roughly chopped
- Sea salt and freshly ground black pepper, to taste (optional)
Hot honey drizzle
- ¼ cup honey
- 2 tsp chilli flakes
Method
- Preheat the oven to 250°C.
- Place the pizza base onto a baking tray or pizza stone. Drizzle with 1 tablespoon of olive oil and spread evenly over the base. Scatter over the minced garlic and top with the mozzarella.
- Bake for 4 minutes, until the cheese begins to melt.
- Remove from the oven and top with dollops of ricotta, pumpkin ribbons and chopped mixed nuts. Drizzle with 1 tablespoon of olive oil.
- Reduce the oven temperature to 220°C and bake for a further 4 minutes, or until the pumpkin is tender and the crust is crisp.
- Meanwhile, combine the honey and chilli flakes in a small bowl.
- Remove the pizza from the oven and drizzle with the hot honey and remaining ½ tablespoon of olive oil. Slice and serve immediately.
Tips
When serving four people, this pizza offers 30g of nuts per serve - the health-promoting daily target for nuts! Serve alongside a fresh, leafy green salad.
