Nuts for Life - Berries with pistachio yoghurt compote

Ingredients

  • 1½ cups frozen mixed berries, thawed
  • 2 cups low fat natural yoghurt
  • 1 tbsp orange juice
  • 1 tsp finely grated orange rind
  • ⅓ cup chopped pistachios
  • 1 tbsp maple syrup

Method

  1. Place the berries and their juices in the base of small glass jars.
  2. Combine yoghurt with orange juice and rind. Spoon on top of berries.
  3. Top yoghurt with pistachios then drizzle with maple syrup to serve.
