Ingredients
Berry layer
- 200g frozen raspberries
- 1 tsp maple syrup or honey (optional)
Matcha chia pudding
- 2 tsp matcha powder
- 250ml milk of choice
- 3 tbsp chia seeds
- 1 tsp maple syrup or honey
- ½ tsp vanilla extract/powder
Toppings
- Fresh strawberries, sliced
- 20g pistachios, roughly chopped
- 20g pecans, roughly chopped
- 20g hazelnuts, roughly chopped
- Fresh mint
Method
- Blend the raspberry and maple syrup until smooth to make a simple purée.
- In a bowl or jar, whisk together the matcha, milk, maple syrup and vanilla until the matcha is fully dissolved. Stir in the chia seeds and refrigerate for at least 4 hours or overnight until thickened.
- Spoon the raspberry purée into the base of serving glasses or jars, then top with the matcha chia pudding.
- Finish with sliced strawberries, chopped pistachios, pecans and hazelnuts. Garnish with fresh mint and serve chilled.
Tips
This nourishing make-ahead breakfast or snack is packed with fibre, healthy fats and vibrant flavours, making it an easy way to enjoy a variety of nuts. While the recipe uses pistachios, pecans and hazelnuts, you could replace any of these with another favourite nut (think: macadamias, almonds or walnuts, to name a few!).
