Smashed cucumber salad with creamy ginger-miso peanut dressing

Ingredients

Cucumber salad

  • 2 Lebanese cucumbers (or 1 large continental cucumber)
  • ½ tsp sea salt
  • 1 tbsp roasted sesame seeds
  • 30g roasted unsalted cashews, roughly chopped
  • Fresh coriander leaves, to serve
  • Chilli crisp, to serve (optional)

Creamy ginger-miso peanut dressing

  • 80g roasted unsalted cashews
  • 1 tbsp smooth peanut butter
  • 1 tbsp white miso paste
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp maple syrup or honey
  • 1 small garlic clove
  • 1 tsp grated fresh ginger
  • Juice of ½ lime
  • 2-4 tbsp water

Method

  1. Place the cashews for the dressing in a bowl and cover with boiling water. Soak for 15 minutes, then drain.
  2. Trim the cucumbers and lightly smash them with the flat side of a knife or rolling pin until they split. Tear into bite-sized pieces, toss with the salt and leave for 10–15 minutes. Drain off any excess liquid.
  3. Add the soaked cashews, peanut butter, white miso paste, rice vinegar, soy sauce, sesame oil, maple syrup, garlic, ginger, lime juice and 2 tablespoons of water to a blender. Blend until smooth and creamy, adding more water as needed until the dressing reaches a pourable consistency.
  4. Arrange the smashed cucumbers on a serving platter and spoon over the creamy ginger-miso peanut dressing.
  5. Scatter with the chopped cashews, spring onions, sesame seeds and fresh coriander. Finish with chilli crisp, if using, and serve immediately.

Tips

Serve alongside grilled tofu, barbecue meats or dumplings, or enjoy as a refreshing side with steamed rice or noodle dishes.
