Winter calls for warming, nourishing recipes. From hearty soups, to comforting one-tray bakes, and indulgent brownies, you’ll love our winter recipes . . . all incorporating nuts, of course.

With their earthy flavours, crunchy texture, and impressive nutritional profile, nuts make the perfect ingredient inclusion in all types of winter dishes.

Five comforting winter recipes:

Cashew pumpkin soup

A perfect winter combination of two already-delicious foods: cashews and pumpkin. This vibrant, nourishing soup is quick and easy to make, and can be frozen and reheated. Did you know that cashews contain the most iron and zinc of all nuts? A powerful immunity-booster over the cooler months!

Tip: Nut nutrients not only help keep you fuller for longer (handy in managing winter kilo creep!), but also help stabilise blood sugars levels, by lowering the glycaemic load of carb-rich meals.

Oven roasted veggies with mixed nut crumble

You’ll love this simple dish that is perfect on its own or served as a side. The nuts add a delicious touch of earthy crunchiness to this recipe, and pair so well with the vegetables. Plus, a serve of this hearty dish provides the daily nut target (30g) – and a healthy dose of plant protein!

Tip: Along with the zucchini in this recipe, which is at its best in the cooler months, other in-season winter veggies include broccoli, cauliflower, eggplant, parsnips and pumpkin.

Potato, leek and roasted macadamia soup

Looking for a modern take on an old favourite? Garlic, leek, potatoes, macadamias, and thyme combine beautifully in this good-for-you dish. It’s winter comfort food at its tastiest, with the bonus of plant protein, gut-loving fibre, and antioxidants!

Tip: To make this recipe dairy free, simply substitute the thickened cream for coconut cream or your preferred non-dairy milk.

Umami chestnuts

Did you know that umami means ‘essence of deliciousness’ in Japanese? Often described as a ‘meaty’ or ‘brothy’ taste – umami instantly adds flavour depth to any dish, and these umami chestnuts are testament to that! Served straight from the oven, they’re the PERFECT winter snack.

Tip: Fresh chestnuts are in-season until mid-July. Remember to store them in the fridge, just like other fresh produce.

Pumpkin and pecan brownies

You’ll love the magical flavour combination of pumpkin, pecans, orange, spices and dark chocolate, in this easy recipe. And at 30g of nuts per serve, could there be a tastier way to get your daily target of nuts? Serve with a warm cup of tea for an incredibly tasty treat!
