Here are some of our summer favourites – from BBQ prawns and a fresh, vibrant salad, to a lemony cake and cooling popsicle treats. These nut-inspired recipes are perfect for summer entertaining and get-togethers.
Using nuts as an ingredient brings a healthy, fun twist to each dish – with every one of them made for sharing!

Mango, feta and Brazil nut salad
Bring all the tastes of summer together in this vibrant, fresh and fruity salad. Peppery rocket is tossed with mango, tomatoes, red onion and feta. To finish, toasted Brazil nuts add a rich, buttery crunch – along with a boost of selenium, healthy fats and antioxidants! Enjoy as a light, refreshing meal on its own, or as a flavourful side at your next BBQ with family and friends.

Tip: The Brazil nuts can be replaced with walnuts or pecans, which work just as well.
Prawns with skordalia
Bring a taste of the Mediterranean to your summer table! This fresh, flavour-packed dish features creamy skordalia – a traditional Greek garlic dip, reinvented here with toasted almonds. The almonds add a subtle nuttiness along with heart-healthy fats, vitamin E, and plant protein. Perfect for effortless summer entertaining, this light yet satisfying dish shines alongside a crisp, green salad.

Chestnut hummus
Add a unique twist to your summer entertaining with this smooth, roasted chestnut hummus. It’s subtly sweet, yet light and earthy – and utterly delicious! Chestnuts are naturally low in fat and rich in fibre, vitamin C and slow-release carbohydrates, making this a nourishing dip. Tip: Chestnuts pair well with creamy blue cheeses like gorgonzola or stilton, as well as softer cheeses like camembert or goat’s cheese, adding a delicious contrast of flavours and textures.
Fresh Australian chestnuts are typically available from mid-March to July. But you can buy ready-to-use peeled and frozen Australian chestnuts online or from select stockists all year around.
Lemon almond cake
Light, airy and bursting with summer flavour! This cake is made with almond meal and coconut, then topped with flaked almonds and a drizzle of lemon and passionfruit syrup. Naturally gluten-free, this deliciously-moist indulgence pairs well with a dollop of mascarpone or tangy Greek yoghurt. An instant crowd pleaser on warmer days!

Tip: This recipe is perfect for entertaining as it can be made a day or two ahead. The cake will keep for 3-5 days in an airtight container. Store the syrup in the fridge until required.
Creamy macadamia maple popsicles
Cool down in style with the ultimate three ingredient summer treat! Macadamias, milk and maple syrup blend together for a naturally sweet, velvety delight that’s simple yet satisfying. Macadamias add a boost of monounsaturated ‘good’ fats for heart and skin health. Enjoy straight from the freezer for a refreshing finish to any summer gathering.

Tip: The dairy full cream milk keeps the popsicles creamy when frozen but you could try an alternative milk, like macadamia milk, if you prefer.
